Spatchcock chickens make me think of France, dry white wine and frites. These lovely local spatchcocked ‘Sutton Hoo’ chickens are reared slowly for 10-12 weeks, much longer than standard supermarket free-range chickens. This gives them a wonderful texture and full flavour - I always suggest cooking them a little lower and slower to make the most of this. They’re so tasty and make a really easy meal. Each spatchcock chicken typically weighs 2kg and would feed 4-6 people.

We remove the backbone and spatchcock the birds ourselves. Choose from either plain, or marinated with one of our own chicken marinades; olive oil, sea salt, mixed Provençale herbs and garlic; West Indian Jerk seasoning; or Olive oil, lemon, ginger, chilli and garlic

As well as being lean, healthy and full of old-fashioned ‘chicken’ flavour, these are so easy to cook: they take around 30-40 minutes (turn a couple of times during this time) over coals – not right in the burning heart of the grill but over the gentler sides of the fire. Or of course, if it's raining, they can be roasted oven!
