Free Range Pork
Our pork, raised in the fields around the Suffolk coast, is exceptional. The light soil of these coastal pastures enables our free-range pigs to root and forage, growing slowly and happily, so that the resulting pork is high in marbling with a wonderful, traditional flavour, and a good covering of delicious fat to produce great crackling.
It is a privilege to work with these local pig farmers who are putting animal welfare and sustainability first. This isn’t always the case!
We dry-age our pork on the bone for up to two weeks in our hanging chiller, to make sure that the texture and flavour of our pork is at its very best.
