We use Free- Range large black pork from Robert Simmonds up at Oxburgh, Norfolk.
The Pork loin and belly, is boned out, scored, butterflied and seasoned with wild organic fennel pollen, sourced from a friend over in Ronciglione, Lazio. rolled and tied ready for the oven.
Cook long and slow.......
