Ox cheek, as the name suggests, come from the cheek of the animal and is, therefore, probably the hardest working muscle in the animal. Hard working muscles need a long slow cook, just as shin of beef or ox tail do.

Once cooked, this cut is truly delicious, the connective tissue becomes sticky and gelatinous.
