Surprisingly quick and easy to cook, the Butterflied leg of lamb is a blank canvas for flavours with so many choices: traditional rosemary and garlic, Moroccan with ras al hanout, sumaq, coriander; Indian with cumin, yoghurt and spices......
We hang our lamb for a minimum of 7-10 days. This helps to ensure the legs are tender and full of flavour.
We butterfly the leg and flatten it a little to make BBQ cooking easier. We send the bones with your leg too (great for stock!), or for your dogs (fine if given raw).
Whole feeds 6-8; Half feeds 2-4.
