We dry-age our beef sirloins for a minimum of 4-5 weeks then bone-out whole ready to roll for roasting, or to cut sirloin steaks.

The sirloin is a relatively under used muscle with a close grained texture, ensuring a reliably tender and delicious steak. The sirloins also have a good fat covering and often have intramuscular fat or marbling which creates a great flavour.
