Beef flat ribs come with varying names such as Short ribs, Jacobs ladder, dandy ribs or as we call them 'slow roast ribs', because that is how we like to cook them!
Our beef flat ribs come from beef which is all grass-fed on lush Suffolk pasture. We then dry-age the carcass for a minimum of 4-5 weeks and bone out the fore quarter, leaving the ribs above the brisket for our slow roast rib.
The meat does shrink up the bone and the fat renders down after long slow cooking, unctuous and delicious
Each rib should feed one maybe two people, and weigh about 450g.
