"I love to pan-fry mine with lardons, and then serve them on toasted sourdough with plenty of melted butter. Spinach on the side is a great addition. "

Why you will love our Wild Wood Pigeon Breast Fillets...

  • Full of flavour and very lean
  • Extremely easy and quick to cook
  • A delicious and simple supper
Wood pigeons have a beautiful, dark meat with a rich, earthy flavour. The breasts (or fillets) are where the main meat lies, which is why we thought we'd remove the faff and do the plucking and carving for you.
Enjoy the fillets pink: they have a dense grain, like a fillet steak, and are really tender and delicious. In a hot pan, fry two fillets per person for a couple of minutes on each side, and you'll be rewarded with a wonderful, simple supper. These also work brilliantly in a salad with a sharp vinaigrette and some sliced pear or raspberries - it's a great flavour combination.
These beautiful, plump wood pigeons have been shot locally in the fields and woodland around our corner of East Suffolk.

Allow two fillets per person.
