We cut our roasting joints from the haunch (back leg) we then de bone and roll with a covering of caul fat to protect and baste during the cooking process. Min size to roast is 500g and would feed 2 maybe 3.
All our game is sourced from local Suffolk estates and farm shoots. The game is then all processed and vet inspected, before arriving here.
