We use a mixture of boneless shoulder and belly to create the perfect mix of fat and lean minced pork. A blend of herbs and spices, some cracked black pepper and sage gives you a coarse and meaty sausage with a delicate, but earthy flavour. There's a just a little heat and an extra layer of flavour from the pepper.
