This Lincoln Red 'Old Cow' has grazed for its whole life with the Yarn Hill Herd on the meadows and marshes at Iken, next to the River Alde. The Yarn Hill Herd is certified under the National 'Pasture for Life' accreditation scheme. er Alde.
We have been hanging the carcass for eight weeks and it’s now just about perfect.
We have cut the ribs into individual rib joints, so they can be cooked on the griddle or BBQ. This is an exceptional cut of meat, and a real treat. Each rib weighs approx. 1-1.5 kg, and should feed 2-4 people.
