Our diced lamb is sourced from lamb that is reared slowly on small scale local farms, using regenerative farming methods and is free-range and often organic.
We hang our lamb for a minimum of 7-14 days, to ensure our customers get the best possible flavour and texture
We use a mixture of shoulder and leg meat to give a good ratio of fat to meat.
