We source all our Traditional Breed beef from small local mixed farms, that care deeply, not only for their animals welfare, but also the impact on the surrounding countryside.
This is important to us here, and ensures our customers only receive truly good meat!
Our Centre cut Fillet, often referred to as barrel cut, is expertly butchered at our shop.
The centre cut is perfect for cutting steaks, searing in a pan as a whole piece, Carpaccio or as a wellington.
Our beef is reared slowly on lush East Suffolk Pasture, we the dry age the fillet for a minimum of 4-5 weeks, then trim the fillet ready for the pan or oven.
