Our traditional breed beef is grass-fed, and has been dry-aged for a minimum of four weeks.

Brisket is a cut taken from the lower chest. Imagine standing face onto a cow - where the ribs join into a point between the front legs is where brisket comes from.

It is quite a well used muscle, so will need long slow cooking. The colour is fantastic: dark and intense; and the wonderful yellow fat runs lightly, but consistently, right through the meat due to a rich and long diet of good grass. The fat content, is a good thing, full of goodness and flavour

Brisket is so delicious cooked slowly at a low temperature and if you’ve got a lot to feed, a whole brisket is ideal - one 4.kg piece can feed up to 15.

Our beef comes from trusted local Suffolk farms, carefully selected for their dedication to quality and sustainable practices. We work closely with farmers like Emily Winter, whose ‘Pasture for Life’ certified Lincoln Red herd at Darrow Farm produces exceptional grass-fed beef, and the Somerleyton Estate, known for its regeneratively raised Welsh Black and Highland cattle. We are also proud to partner with Natasha Mann, whose award-winning Lincoln Reds graze by the River Alde’s lush meadows, yielding beautifully marbled, rich, and tender beef. Receiving whole carcasses allows us to hang the meat for 4 - 8 weeks (or more by request), ensuring superior flavour and texture.
