Pasture-fed Old Cow chuck steak, deeply marbled and tender, ideal for braising or fast searing.
Old Cow chuck steak is a big, full-flavoured cut taken from the shoulder, beneath the blade bone, and it really shows what time and grass can do for beef. With its deep colour and generous marbling, this is proper, grown-up meat — robust, rich and deeply savoury.
It’s ideal for slow braising into a ragù, where the flavour builds and deepens as it cooks. It’s also excellent in a Rendang or other slow-cooked curries, as the porous texture of the meat absorbs marinades beautifully.
Our pasture-fed, heritage breed Old Cow beef is dry-hung on the carcass for a minimum of five weeks, concentrating flavour and tenderising the meat. Thanks to that ageing and the natural fat running through the muscle, this chuck can also be cooked fast, sliced like a bavette steak, delivering an intense, beefy character you don’t get from younger cattle. Rest well after cooking — 20 minutes is worth it — before slicing and serving with salad, green beans and new potatoes or skinny chips.

Our Old Cow Beef is a product of both dedication and exceptional farming partnerships. It is sourced from one of two herds we work with specifically to produce this wonderful meat: traditional-breed Lincoln Reds from the Yard Hill herd at Iken, and Belted Galloways from the Carr Farm herd on the River Waveney. These grass-fed cattle live freely from 5-12 years on rich meadows and marshes. This extended grazing allows the cattle to develop extraordinary flavour, renowned for its richness and creamy marbling. We honour this unique beef by slow-hanging each carcass for 8-10 weeks, ensuring its impeccable quality and depth of flavour.

To cook fast (like a bavette):
1. Bring to room temperature, season and rub with a little oil
2. Heat up a good solid frying pan
3. Sear quickly on a high heat (perhaps 5-8 minutes each side)
4. Rest on a wooden board for about 10 minutes (this is crucial), then cut into thin slithers to share.
