Grass fed beef ~ Slow braising ~ Great in the slow cooker

This is an eight year-old Lincoln Red, which has been grazing for its whole life with the Yarn Hill Herd on the meadows and marshes at Iken, next to the River Alde. 

We have been hanging the carcass for eight weeks and it’s now just about perfect.

Perfect for a long slow cooking casserole or a curry, such as a beef Rendang. We use chuck steak or blade steak, more forgiving than shin, and takes a little less time to cook. Keep and at a low temperature and cook for ages! Braising steak from our 'Old Cow' really hold together well for a long cook, with another layer of flavour. So good.
Min cooking time 2-3hrs on a low temp, 120-150 degrees. Aim for 300g per person (ish)
