Our 'En Balon' shoulder is as good as it looks: a wonderful lamb joint that's so easy to carve
A wonderful centre piece - a whole grass-fed lamb shoulder 'En Balon'. This shoulder joint is so easy to cook. Brilliant for the family roast, just pop it in the oven at breakfast on a really low temperature and it can happily slow cook whilst you get on with your day.
Our heritage-breed lambs have been exclusively grazed on the wild flowers and grasses of the varied meadows in this quiet corner of Suffolk, which makes them rich in flavour and very tender. They are slow-grown by one of our cohort of enlightened sheep farmers who care deeply about animal welfare and husbandry. And because we are a whole-carcass butcher we can choose the lambs we'd like from our farmer and thereby ensure the best fat to meat ratio.
Once cooked the meat can be carved or pulled apart, making it great as a traditional roast with all the trimmings. Or try it in the Summer shredded and served in a wrap or with salad.

Our pasture-fed lambs spend their lives grazing the rich meadows along the East Suffolk coast. Their diet of wild grasses and herbs gives the meat its distinctive character and taste. We always hang our lamb for at least a week, which enhances its flavour and really helps the texture and tenderness.
At certain times of the year, we also offer Organic Lamb from Shimpling Park, near Lavenham. Shimpling Park, which went organic in 1999, produces exceptional-quality lamb thanks to its thriving natural pastures. When it's available, you can select the 'Shimpling Park Organic' option above - it's well worth a try.
> Braising, Roast, and Slow cook
1. Preheat the oven to 200ºC (fan oven, or equivalent).
2. Season the shoulder with rosemary, oil, a Maldon sea salt and cracked black pepper.
3. Cover the base of an oven dish with onions, carrots, garlic, cloves and a splash of wine or stock.
4. Place your shoulder on a roasting rack over the top of your veg mix.
5. Roast for 30 minutes. until caramelised.
6. Reduce the oven temperature to 150ºC, cover with foil or greaseproof cook for a further 3-4 hours.
7. Rest on a wooden board for 20 minutes and then pull the meat off the bone.

Our UK courier service delivers Tuesday to Friday, nationwide, for all orders over £40. We use a next day delivery service, but our insulated packaging keeps your meat protected and chilled for up to 48 hours after dispatch, so there's no need to worry if your parcel is a little delayed.
For orders over £85, standard UK delivery is free. You can also upgrade to our priority service for £5, which means your parcel is usually delivered by midday. We recommend this for large value orders and during peak periods.
For orders between £40 and £85, standard delivery is £9.95* and priority delivery is £14.95.
If you are ordering meat for a special event, we recommend selecting a delivery date at least one day before you need it, just to be safe.
*Subject to availability. During peak periods standard delivery slots may be full.
Click & Collect
We also offer a free click and collect service from our shop in Aldeburgh during opening hours. Simply opt to 'collect' when you checkout and choose your collection date from the calendar provided.
