We hang our traitional breed Lamb for a minimum of 7 days, this helps to ensure and wonderful full flavour and texture to your lamb.
Our guard of honour is cut by our team in the shop, from the best end cutlets in one piece, then carefully French trimmed to reveal the ribs. The chine bone removed to make carving very easy. Great for a special treat or dinner party.
Seven bones per rack, so the Guard of Honour should feed 4 comfortably.
All our lamb is pasture-fed and sourced from trusted local Suffolk farms. On occasions during the year, we also offer Organic Lamb from Shimpling Park, near Lavenham. Since converting to organic in 1999, Shimpling Park has thrived without artificial chemicals, with meadows full of diverse grasses, flowers, and clovers providing exceptional grazing pastures.
