A visual treat! Very easy to carve so cut it on the table for maximum impact
Our traditional breed lamb is slowly reared and grazed on our gentle, local meadows that are rich with diverse grasses, flowers and clovers. This provides an exceptional, natural diet for our free-roaming lambs which is why the flavour and tenderness of our lamb is so fantastic. And because we are a whole-carcass butcher we can carefully choose the lambs we'd like from our farmers for the perfect fat-meat ratio, before dry-hanging our lamb for up to ten days in the shop to help ensure these racks have a wonderful full flavour and tender texture.
We carefully cut our Guard of Honour in one piece from the 'best end' cutlets, then French trim it to reveal the ribs. The chine bone is removed to make carving very easy. It's such a pretty cut and makes a great focal point for a dinner party or small gathering.
Seven bones per rack, so the Guard of Honour should feed 4 comfortably.

Gerard's Suggestion
Our pasture-fed lambs spend their lives grazing the rich meadows along the East Suffolk coast. Their diet of wild grasses and herbs gives the meat its distinctive character and taste. We always hang our lamb for at least a week, which enhances its flavour and really helps the texture and tenderness.
At certain times of the year, we also offer Organic Lamb from Shimpling Park, near Lavenham. Shimpling Park, which went organic in 1999, produces exceptional-quality lamb thanks to its thriving natural pastures. When it's available, you can select the 'Shimpling Park Organic' option above - it's well worth a try.
