We make our porchetta with the very best, free-range, heritage breed Suffolk pork, to a simple and authentic recipe from the Lazio region of Italy - the traditional home of porchetta. The pork loin - with belly still attached - is boned out, scored, butterflied and seasoned with a garlic and wild organic fennel pollen stuffing (the pollen is sourced from a friend over in Ronciglione, near Viterbo in the Lazio region). Then this lovely joint is rolled and tied, ready for the oven.

Our excellent pork comes from free-range, heritage breed pigs, reared on small local farms in Suffolk that are well-known to us, by farmers who really care about their animals. We dry-age our pork for at least two weeks, which allows the meat to develop a deeper flavour (and helps skin to dry out naturally for cracking crackling.) 

This is a really wonderful joint for a celebration or gathering. And it tastes almost as good the next day for sandwiches. 

Allow around 300g per person. Our 2kg joint will feed around 6. 

For best results, cook long and slow.

Our exceptional pork comes from free-range pigs raised in the light, sandy soils of East Suffolk. This unique environment allows them to root and forage naturally, resulting in pork known for its traditional flavour, excellent marbling, and a delicious fat covering for perfect crackling. We source our heritage breed pork from a select group of local farms, including the wonderful 'British Lops' from Thatched House Farm on the Broads, where our farmers prioritise first-rate animal welfare and husbandry. These close partnerships ensure consistently high-quality pork with exceptional flavour and texture. To enhance its character and ensure excellent crackling, we dry-age the pork on the bone for up to two weeks in our hanging chiller.
