A wonderful and traditional Sunday roast. There are two ways to enjoy a Hogget leg, either they can be slow cooked on a low temperature, up to six hours, or cooked conventionally at a higher temperature, but for much shorter amount of time, up to 2-21/2 hours.

Once cooked, however it is imperative to rest the joint for as long as possible. It really does make a huge difference to the eating qualities of your joint.

All our hogget is pasture-fed and sourced from trusted local Suffolk farms. On occasions during the year, we also offer Organic Hogget from Shimpling Park, near Lavenham. Since converting to organic in 1999, Shimpling Park has thrived without artificial chemicals, with meadows full of diverse grasses, flowers, and clovers providing exceptional grazing pastures.
