A whole fillet is such a treat. So tender with a wonderful, rich flavour. Roasted on its own, a fillet is perfect for a special occasion – bring it whole to the table before cutting into slices for maximum impact. We source all our traditional-breed beef from carefully chosen small, local farms that care deeply both for their animals and for the surrounding countryside, and with which we have worked together with for many years to produce the best beef we possibly can. These grass-fed cattle have been slowly-reared on lush Suffolk pasture, with plenty of time for tenderness and flavour to develop. 

Because we believe in whole-carcass butchery, these fantastic fillets have been dry-aged for up to eight weeks in their carcass, which keeps them succulent and gives them an exceptional flavour. 

A whole filled (1.8kg) should serve up to 10 people.

Our beef comes from trusted local Suffolk farms, carefully selected for their dedication to quality and sustainable practices. We work closely with farmers like Emily Winter, whose ‘Pasture for Life’ certified Lincoln Red herd at Darrow Farm produces exceptional grass-fed beef, and the Somerleyton Estate, known for its regeneratively raised Welsh Black and Highland cattle. We are also proud to partner with Natasha Mann, whose award-winning Lincoln Reds graze by the River Alde’s lush meadows, yielding beautifully marbled, rich, and tender beef. Receiving whole carcasses allows us to hang the meat for 4 - 8 weeks (or more by request), ensuring superior flavour and texture.
