Gerard's Suggestion
Our Mutton mince is full of flavour with a robust texture for long slow cooking.
Just because it's 'only mince' doesn't mean that we cut any corners. We make our mince from mutton that is at least two years old at slaughter and then dry age it for a minimum of two weeks. It has a rich, full flavour and a more robust texture than the slightly more delicate, lamb mince.
A mixture of shoulder and belly is used to make this delicious mince. We trim a lot of fat from these cuts before we mince to ensure that the ratio of fat to lean meat is just right whether it's for a simple Shepherd's pie, a moussaka or to make some Kofte or burgers.

Gerard's Suggestion
Our mutton is a true celebration of tradition and quality, sourced exclusively from local, small-scale producers who share our passion for ethical and environmentally conscious farming. Each animal is pasture-raised for several years, grazing on a natural diet of wild herbs and mixed grasses, which gives the meat its distinctive, rich flavour. We’re proud to work with exceptional farmers like Hugh Crossley at the Somerleyton Estate near Lowestoft, Alan Peck in Erpingham, and John and Alice Pawsey at Shimpling Park Farm. We take the time to hang the carcasses for around 30 days, sometimes longer, to get the best out of this wonderful meat.
> Slow cook, One-pot, and Tray bake
1. Fry off some chopped onion, garlic, spices and set aside
2. Add in the mince and fry until browned. Add the onion mixture back in and add some tinned tomatoes, natural yogurt and seasoning (plus a little water if required)
3. Cook for around 30 minutes until cooked through and delicious!
