These lamb chops have been marinated with fresh mint, olive oil, some seasoning and a little brown sugar mixed in.

Our Lamb chops are a traditional favourite in the shop. The addition of our natural minty glaze is a simple twist our customers love.

The loin chop has some of the best bits of the lamb all in one place: creamy fat, full of omega 3 and flavour; bone which gives flavour and tenderness; soft meat - essentially sirloin - which has amazing flavour and marbling.

You can oven-roast our grass-fed lamb chops, or cook them on an open fire. The flames will 'crisp up' the outer layer of fat beautifully to create and superb smoky flavoursome chop.

We cut these shops from the whole carcass in our shop in Aldeburgh so we can ensure the meat has been hung for the correct amount of time - normally 10 days or so - and the fat has been properly trimmed so the wonderful meat shines.

Our pasture-fed lambs spend their lives grazing the rich meadows along the East Suffolk coast. Their diet of wild grasses and herbs gives the meat its distinctive character and taste. We always hang our lamb for at least a week, which enhances its flavour and really helps the texture and tenderness.

At certain times of the year, we also offer Organic Lamb from Shimpling Park, near Lavenham. Shimpling Park, which went organic in 1999, produces exceptional-quality lamb thanks to its thriving natural pastures. When it's available, you can select the 'Shimpling Park Organic' option above - it's well worth a try.
