Our wonderful beef is heritage breed and is grazed exclusively on lush Suffolk pasture at one of our small, trusted local farms. We then dry-age the whole sirloins, with the fillet attached, for a minimum of 4-8 weeks to enhance the flavour and texture of this outstanding beef.
A T-bone consists of fillet (a small underworked muscle with close grain and no connective tissue), and sirloin, which both run alongside a T-shaped bone. It's also known as 'porterhouse', but we think T-bone covers it. It's an iconic cut that works brilliantly on a bbq but is also great in a hot pan, seared with plenty of butter and sea salt. Keep it simple. The meat should speak for itself.

Our beef comes from trusted local Suffolk farms, carefully selected for their dedication to quality and sustainable practices. We work closely with farmers like Emily Winter, whose ‘Pasture for Life’ certified Lincoln Red herd at Darrow Farm produces exceptional grass-fed beef, and the Somerleyton Estate, known for its regeneratively raised Welsh Black and Highland cattle. We are also proud to partner with Natasha Mann, whose award-winning Lincoln Reds graze by the River Alde’s lush meadows, yielding beautifully marbled, rich, and tender beef. Receiving whole carcasses allows us to hang the meat for 4 - 8 weeks (or more by request), ensuring superior flavour and texture.

1. Place your T Bone Steak on a plate and allow it to reach room temperature.
2. Preheat your oven to 170°C (fan oven, or equivalent)
3. Rub a little oil on to the T bone and season well with sea salt flakes and some cracked black pepper.
4. Heat up your BBQ; then let the flames die down. If using a griddle pan, get it nice and hot.
5. With tongs, stand your steak with the fat side down to render some of the fat and get some heat into the fat. Fat takes longer to cook than the meat - allow 5-6 minutes
6. Crank up the heat and lay the steak down to sear the meat but don’t move it around. Wait for 1-2 minutes then turn it over and sear for another 1-2 minutes
7. Reduce the heat a tad, add some garlic and butter and baste the steak in the melted butter for a couple of minutes, turning the steak occasionally.
8. Place on a tray in the pre heated oven for 3-4 minutes.
9. Remove from the oven, place a little greaseproof paper on a wooden board, and lay the steak on top with a clean tea towel over it. Rest for 5 -8 minutes before enjoying.

For orders over £85, standard UK courier delivery is free, or you can opt for the priority service for £5 which means your parcel is usually delivered by midday - we recommend this option for large value orders & peak delivery periods.
For orders between £40 and £85, we charge £9.95 for standard UK delivery and £14.95 for Priority UK courier delivery.

We also offer a free click and collect service from our shop in Aldeburgh during opening hours. Simply opt to 'collect' when you checkout and choose your collection date from the calendar provided.
