One of the most delicious part of the animal. Our grass-fed, heritage breed oxtail from a small Suffolk farm is a real treat and makes a wonderful meal for a cold winter's day.

Traditionally one of the cheaper cuts before falling out of favour completely in the late 1980s, oxtail is now a sought-after and prized cut of beef - after all, a cow only has one tail...

The key with oxtail is to cook it low and slow. Perfect for braising or a pot roast, it can take hours of gentle cooking and rewards with a fantastic depth of flavour and fall-apart texture thanks to its natural collagen and gelatine content. Delicious. 

One oxtail should serve 4 (add some shin too if you'd like to bulk it out.)

Our beef comes from trusted local Suffolk farms, carefully selected for their dedication to quality and sustainable practices. We work closely with farmers like Emily Winter, whose ‘Pasture for Life’ certified Lincoln Red herd at Darrow Farm produces exceptional grass-fed beef, and the Somerleyton Estate, known for its regeneratively raised Welsh Black and Highland cattle. We are also proud to partner with Natasha Mann, whose award-winning Lincoln Reds graze by the River Alde’s lush meadows, yielding beautifully marbled, rich, and tender beef. Receiving whole carcasses allows us to hang the meat for 4 - 8 weeks (or more by request), ensuring superior flavour and texture.
