We’ve put a selection of our favourites for cooking over fire.  Buying really good, traditional-breed meat that has been very well aged does make a huge difference to the flavour. The ageing process also greatly reduces the water content of your cut, which makes searing the meat (and sealing in its flavour) much more effective.
