Grass-fed heritage beef rump, rich and full of flavour.
Our wonderful heritage breed beef comes from cattle that have been grass-fed all their lives on the lush pastures around our corner of Suffolk, where we take great pride in having really good relationships with our farmers. We are a whole-carcass butchery and like to hang our beef for a minimum of 4-5 weeks before we expertly carve it in the shop.
The rump makes a great Sunday roast. It’s cut from the top end of the leg, where three different muscles meet, each one offering their own particular flavour and texture, with a good layer of fat around the outside. It makes a classic, really delicious roast that’s very easy to cook and carve.
Although it’s full of flavour, the rump can be a fairly lean cut, so it works well with served with potato dauphinois, mash or a nice potato salad in the summer. You could also try pot-roasting it, and it’s great sliced thinly for sandwiches or in a summer salad.
