A traditional Christmas lunch. If you haven't tried a goose before, it's definitely worth a go!
We source our wonderful free-range geese form Yew Tree farm, 10 or so miles from our shop. The geese arrive as day old goslings in late May, from Norfolk Geese in Pulham Market. They are the legarth strain, which undoubtedly produces the finest meat producing goose available.
They are allowed to free range and supplement their diet with grass and bugs, with additional homegrown cereals. These geese are remarkable.

Our free range turkeys, geese and roasting chickens come from Yew Tree Farm in Fressingfield, a family-run farm nestled in the picturesque Suffolk countryside. We’ve cultivated a close relationship with Philip, who rears his flock with care and expertise. The birds are raised slowly to full maturity, spending time outdoors with plenty of space to roam freely.
> Roast, One-pot, and Oven bake
1. Heat oven to 200°C (fan oven, or equivalent).
2. Remove any excess fat from inside the bird and, prick the skin all over.
3. Sit the goose in an empty sink and pour over 2 kettles of boiling water. This will tighten the skin. Leave to cool and then dry off with kitchen roll.
4. Stuff the goose with the onion, something citrusy and some bay leaves. Rub all over with Maldon's Sea Salt.
5. Sit the goose on a trivet in a large roasting tin and tightly cover with a large piece of foil. Cook for 1 hr 30 mins.
6. Remove from the oven, take off the foil, using oven gloves lift the rack (and the goose) out of the roasting tin. Pour all the fat from the tin into a bowl and set aside.
7. Sit the goose back in the tin, cover with foil, then roast for 1 hr.
8. Remove the foil and return the bird to the oven for 15-20 mins to brown the skin.
9. Place your goose on a wooden board to rest for 30 mins.

Our UK courier service delivers Tuesday to Friday, nationwide, for all orders over £40. We use a next day delivery service, but our insulated packaging keeps your meat protected and chilled for up to 48 hours after dispatch, so there's no need to worry if your parcel is a little delayed.
For orders over £85, standard UK delivery is free. You can also upgrade to our priority service for £5, which means your parcel is usually delivered by midday. We recommend this for large value orders and during peak periods.
For orders between £40 and £85, standard delivery is £9.95* and priority delivery is £14.95.
If you are ordering meat for a special event, we recommend selecting a delivery date at least one day before you need it, just to be safe.
*Subject to availability. During peak periods standard delivery slots may be full.
Click & Collect
We also offer a free click and collect service from our shop in Aldeburgh during opening hours. Simply opt to 'collect' when you checkout and choose your collection date from the calendar provided.
