Gerard's Suggestion
You simply can't beat diced mutton to make the most rich, flavoursome stews, curries and hot pots.
Heritage breed mutton is generally darker in colour than lamb and hogget, with a rich, robust flavour thanks to a combination of age and those extra years grazing on meadow and pasture. This rich meat meat works really well for dishes with strong, bold flavours, especially if they are slow-cooked. It also has a great texture for slow-cooking, as it will stat in tact over a long cook, allowing the herbs, spices and flavours to penetrate right into the meat.

Our mutton is a true celebration of tradition and quality, sourced exclusively from local, small-scale producers who share our passion for ethical and environmentally conscious farming. Each animal is pasture-raised for several years, grazing on a natural diet of wild herbs and mixed grasses, which gives the meat its distinctive, rich flavour. We’re proud to work with exceptional farmers like Hugh Crossley at the Somerleyton Estate near Lowestoft, Alan Peck in Erpingham, and John and Alice Pawsey at Shimpling Park Farm. We take the time to hang the carcasses for around 30 days, sometimes longer, to get the best out of this wonderful meat.
> Slow cook, Casserole, and Braising
For a delicious hotpot:
1. Preheat oven to 180ºC (fan oven, or equivalent)
2. Brown the diced mutton in an ovenproof casserole, remove and set aside
3. Brown some root veg (onions, carrots, leeks etc)
4. Add the browned mutton to the veg along with Worcestershire sauce, stock, bay leaves and seasoning
5. Top with slices of potato, dot with butter and cover before transferring to the oven for 2.5 hours, removing the lid for the last 30 minutes of the cooking time

UK delivery
Our UK courier service delivers Tuesday to Friday, nationwide, for all orders over £40. We use a next day delivery service, but our insulated packaging keeps your meat protected and chilled for up to 48 hours after dispatch, so there's no need to worry if your parcel is a little delayed.
For orders over £85, standard UK delivery is free. You can also upgrade to our priority service for £5, which means your parcel is usually delivered by midday. We recommend this for large value orders and during peak periods.
For orders between £40 and £85, standard delivery is £9.95* and priority delivery is £14.95.
If you are ordering meat for a special event, we recommend selecting a delivery date at least one day before you need it, just to be safe.
*Subject to availability. During peak periods standard delivery slots may be full.
Click & Collect
We also offer a free click and collect service from our shop in Aldeburgh during opening hours. Simply opt to 'collect' when you checkout and choose your collection date from the calendar provided.
