Fillet is the most underused and smallest muscle on the animal, which makes this the most tender, but least available. Hence this cut is the most sought after and in turn, the most expensive.
The centre cut is taken, as the name suggests, from the middle of a whole fillet. It is an even shape and size, so it's great for cutting into steaks, cooking whole as a piece or for the most luxurious of meals, the 'Wellington'.
We dry age our fillet for a minimum of 4-5 weeks, then trim and oven prepare to ensure your centre cut arrives ready for you to cook.
