Offally tasty ~ Unusual~ Taste of Spring
An often overlooked cut, but so delicious. These are glands located either on the heart or throat. Very popular in middle eastern cuisine.
They are so simple to cook. I like to dust in seasoned flour then fry in a pan full of garlicky butter and some fresh rosemary. They need to be crispy on the outside and soft in the centre.
Serve as an appetiser with some lovely cold beer........
