Half a whole free-range Welsh Mountain or Norfolk Horn sheep (approx 22kg/11kg), reared on the rich pasture of its farms and parkland.
Hoggett is used to describe lamb that’s had two springs and summers on grass. An extra six months grazing on luscious spring and autumn pasture really makes a difference to the taste - it outshines lamb for flavour.
Half Box contains:
1 shoulder boned and rolled with rosemary and garlic ~ 1 neck fillet
1 rack of hogget (French trimmed) ~ 6 loin chops
500g mince ~ 1 boneless rump roast
1 whole leg boned and rolled, with rosemary and garlic.
