Simon and Karen rear Norfolk Blacks, at Chestnut Farm, Hingham, Norfolk. The oldest turkey breed in the country. This is a slow-maturing breed with a great, strong flavour and firm texture. Simon breeds and handles their completely free-range birds traditionally - hand-plucking and hanging their turkeys for ten days on the farm. I’m really excited to have found them, and will be having one myself!
