Half a whole free-range Welsh Mountain or Norfolk Horn sheep (approx 7-8 kg), reared on the rich pasture as part of the Somerleyton estate re-wilding project.
Hoggett is used to describe lamb that’s had two springs and summers on grass. An extra six months grazing on luscious spring and autumn pasture really makes a difference to the taste - it outshines lamb for flavour.
Half A Hogget Box contains:
Weights approx -
1 shoulder boned and rolled with rosemary and garlic (2kg) ~ 1 neck fillet (500g)
1 rack of hogget (French trimmed) (600g) ~ 6 loin chops (800g)
Lean mince (500g) ~ 1 boneless rump roast (450g)
1/2 Leg to roast on the bone (1.5KG) ~ Diced hoggett (800g) to slow cook.
