Grass fed Wild West Wibs (beef)


Our beef is all grass fed on lush Suffolk/Norfolk pasture, we the dry age the carcase for a minimum of 4-5 weeks. We then bone out the fore quarter, leaving the ribs above the brisket for our slow roast rib.

We marinate these ribs with a our own rub, sea salt, fennel seeds, brown sugar, paprika and olive oil.
